    Many customers have been asking me to show them how to make my Spaghetti alle Vongole recipe (Spaghetti with Clams)
    So, here it is, and I have also made a video for you to watch how to make this fantastic recipe.

    Discard any clams with broken shells and any that refuse to close when tapped.

    Place the clams in a large heavy based pan, add the water then cover with a lid and cook over high heat, shaking the pan occassionaly for 5 - 6 minutes, until shells are opened.

    Remove the clams with a slotted spoon and strain the liquid through a muslin lined sieve into a small pan. Bring to the boil, simmer to reduce by half. Discard any clams that remain closed.

    Bring a large saucepan of lightly salted water to the boil, add the spaghetti and cook for 7 - 8 minutes until tender, but still firm to the bite

    Heat oil in a large heavy based saucepan, add the garlic, rosemary, chilli, fry gently on low heat until garlic is golden brown

    Add the tomatoes, the clams, parsley and basil, the reduced liquid from the clams, white wine, salt and pepper.

    Mix well, cover with a lid and cook for 5 - 7 minutes until the liquid is reduced to half.

    Drain the spaghetti, transfer to the pan with the clams, mix well stirring constantly for 3 - 5 minutes until the liquid has been absorbed.

    Divide onto 2 plates, drizzle with olive oil, garnish with basil and serve
