Ingredients

Potatoes
300 grams Flour have extra for dusting
100 grams Spinach paste
100 grams Parmesan cheese
2 Egg yolks
Salt and pepper
Quarter teaspoon Nutmeg
1 tablespoon Chopped basil

One of my best customers Violet asked me to show her how to make fresh gnocchi pasta so I decided to make this video to show how I do this,

Steps

Done

Fill a deep boiling pot pan with cold water and place your potatoes (with the skin on) add salt then bring to boil.

While potatoes are cooking begin preparing the other ingredients ready to add later

Cook the potatoes until tender

Drain the potatoes and set aside to cool until they are not so hot as you are able to handle and peel

Then mash the peeled potatoes

Place the mash onto your worktop

Begin adding ingredients:
2 egg yolks,
Parmesan cheese,
Basil,
Spinach paste,
Nutmeg,
Salt and pepper.

Begin adding flour and start mixing

Continue kneeding the mix and adding flour as you go, ensuring the dough doesn't get too dry, too wet or too sticky.

Once dough is ready roll it into a big sausage shape, keep dusting with flour as you go

Then cut the sausage shape into 2 inch portions.

Then roll each portion into thinner sausage shapes and cut into 1.5 centimetre pieces

Gently press with a fork or roll each piece on a ribbed wooden board to get the ribbed effect on the gnocchi.

At this stage the gnocchi can be refrigerated for use in the next day or two. Or freeze for longer storage.

Frozen gnocchi can be dropped into boiling water to cook.
