Fettuccine Paglia e Fieno with Carbonara Sauce for two

    We refer to the green and white noodles type of pasta by the same name.

    With this recipe I’ll show you how to make a fantastic Carbonara Sauce to go with this ‘Paglia e Fieno’ pasta.

    Bring a large saucepan of lightly salted water to the boil

    Add the pasta and cook for 7 minutes or until tender but still firm to the bite

    Fry pancetta until crispy

    In a small bowl add 2 egg yolks, fresh cream, Parmesan cheese, Ground black pepper and mix well.

    When pasta is cooked to your taste' drain and mix with the crispy bacon (in frying pan)

    Add the egg mixture onto the pasta and mix well (in the frying pan)

    Serve on a hot plate
