Crostoli Italian Pastry Dessert

    ‘Crostoli‘ is a type of pastry, strips of dough, fried very crispy. They are very easy to make and it’s just like making pasta dough, only with different ingredients. They’re great for children’s parties when made without alcohol. For this recipe I’m going to use grappa so this is only suitable for adults.
    The ingredients quantities below will make a large portion of many strips, so adjust the quantities if you don’t want to make a large batch.

    In a mixing bowl put the sugar, orange zest and butter. Mix well for 5 minutes until the flour, sugar and butter are combined.

    Add the eggs and the grappa to the mixture. Mix well until you get a nice smooth dough

    Remove from the bowl onto a work surface

    Work the dough with your hands until you have a soft and smoother dough.

    Cling film the dough and refrigerate for at least 1 hour.

    Once ready, cut the dough into 4 equal pieces, roll one piece of the dough at a time through the thickest setting of a pasta machine. Do this 3 to 4 times.

    Then lightly dust both sides with flour, and run it through the pasta machine on a thinner setting.

    Repeat this through the settings until the sheets of dough are 1 to 1.5 mm thick and silky.

    Meanwhile heat the oil in a large deep saucepan. Cut the sheets short ways into 3 or 4 cm wide.

    Now deep fry them in the hot oil for 30 to 40 seconds on each side or until golden.

    Place the Crostoli onto a serving dish, sprinkle with icing sugar and serve.
